Tandoori is a classic masala from India and some areas of Pakistan, made up of a combination of spices. The dishes made with tandoori, which is not the same as those made in the tandoor (a typical oven in the Punjab region), are characterized by an intense flavor and a reddish color. And if this explanation has caught your attention, this recipe will too: tandoori mushrooms

Ingredients to make Tandoori Mushrooms:

  • Dip
  • 150 milliliters of water
  • 2 teaspoons of brown sugar
  • 1 splash of Tomato Concentrate
  • 1 pinch of balsamic vinegar
  • 1 teaspoon of Tandoori masala
  • mushrooms
  • 1 splash of sunflower oil
  • 12 units of cardamom pod
  • 1 teaspoon onion seeds
  • 1 teaspoon coriander seeds
  • 2 units of Chives (only the tender part)
  • 1 package of assorted mushrooms

How to make Tandoori Mushrooms:

1.The first step in preparing this original mushroom dish is to make the tandoori sauce. To do this, boil the water together with the brown sugar at medium-high. When it breaks the boil add the tomato paste, the vinegar and the tandoori. Reserve.

Tip: If it is not possible to find the exact ingredients of the recipe, it can be modified by any spice that you have at home

2.Next, roast the mushrooms with a light touch of oil and set aside in the heat once they have browned all over. For this cooking it is preferable to use a wok or a deep frying pan.

3.Slightly crush half of the cardamom pods and fry them in the same wok or pan, with a little more oil. Once ready, remove and reserve.

4.Open the rest of the cardamom pods and extract the seeds. Then take them to the pan along with the onion and cumin and stir until they start to crackle or sound.

5.Immediately after, add the spring onions, previously cut into slices, and the previously sautéed mushrooms to the pan. Increase the heat and continue cooking until the onions are toasted. Keep in mind that only the tender part of the onion will be used. Season with salt to taste.

6.Finally, serve the tandoori mushrooms bathing with the previously prepared sauce and decorate with the fried cardamom pods. This delicious dish with Indian flavors can be served with basmati rice and mango lassi.
