Ingredients to make Tamarind Shrimp:
- 300 grams of peeled shrimp
- 8 tamarind pods
- 2 chipotle chilies
- 45 grams of sugar
- 1 piece of onion finely chopped
- 1 garlic clove finely chopped
- ½ cup of white wine or chicken broth
- 1 tablespoon of olive oil
- 1 cup of water (240 milliliters)
- 1 pinch of paprika
- salt to taste
How to make Tamarind Shrimp:
- To start the tamarind shrimp, clean the tamarind pods. If you wish, you can also remove the seeds; cook them with the water and sugar for 10 minutes.
- When the tamarind has softened, transfer it to the blender, add the chipotle pepper and blend at high speed for 3 minutes.
- Trick: if you want more spiciness you can add more amount of chipotle pepper.
- Then strain the tamarind mixture. If it is too thick, add a little water, pour in the white wine and mix very well.
- Tip: if you don’t want to use white wine, you can replace it with chicken broth, beef broth, or simply water.
- In a saucepan, heat a tablespoon of olive oil and fry the finely chopped onion and garlic clove for a few minutes.
- When the onion and garlic have changed color, pour in the strained tamarind sauce for shrimp, season to taste and cook for 5 minutes over medium heat, stirring constantly to prevent burning.
- Sauté the shrimp in a pan with a little olive oil, season with a little salt and a pinch of paprika.
- Serve the tamarind shrimp bathing them with the sauce and accompany with white rice. To eat!
