Ingredients to make Tabasqueña-style fish fillet:
- 6 catfish fillets
- 2 units of minced garlic
- 1 unit of chopped onion
- 6 units of peeled and chopped tomatoes
- 30 grams of chopped white or cuaresmeño chile
- 200 grams of bell pepper
- 250 grams of octopus already cooked and cut into slices
- 250 grams of small shrimp cooked and peeled
- 6 pieces of banana leaf
- 1 tablespoon of aromatic herbs
- 1 cup of flour (140 grams)
- 2 lemons (the juice)
- 1 pinch of salt
- 1 pinch of pepper
- 1 jet of oil
How to make Tabasqueña-style fish fillet:
- Season the fish fillets with salt and pepper, season with the lemon juice and flour. We put a frying pan with oil to heat, fry the fish over high heat until golden brown and reserve.
- Separately, we prepare the sauce. To do this, we fry the onion and garlic; add the tomato, the chilies and the aromatic herbs. When the onion becomes transparent, add the octopus and shrimp, season to taste and cook. When it is ready, we remove it from the heat.
- In each banana leaf we place a portion of fish, bathe with the previous sauce and wrap the preparation well. Cook on the grill for 10-15 minutes
