Swordfish is a semi-fat oily fish, low in calories and high in vitamin A. Since it does not have bones, it is one of the favorites of children, making it easier to introduce fish into their diet without too many complaints.
To make these fish skewers, swordfish or emperor can be used interchangeably, even frozen, so it is not excessively expensive and we can enjoy good fish all year round without breaking the bank.

Ingredients to make Swordfish Skewers:
- 800 grams of swordfish or emperor
- 15 units of cherry tomatoes
- 2 garlic cloves
- 1 tablespoon chopped fresh parsley
- 2 units of Lemons
- 3 tablespoons of extra virgin olive oil
- 1 pinch of salt
- 1 pinch of ground black pepper
- 10 units of wooden or metal skewers
How to make Swordfish Skewers:
- We will start making these swordfish skewers by crushing the garlic cloves, fresh parsley and a pinch of salt in a mortar.
- Cut the fish into cubes, season with salt and black pepper. Let it marinate in a container with the mashed garlic and parsley and the juice of the two lemons. The minimum time to marinate the fish is 30 minutes, stirring the pieces a couple of times so that they are well impregnated with the flavors.
- After the marinating time has elapsed, the pieces of swordfish are inserted into the skewer sticks, interspersed with fish and cherry tomatoes cut in half.
- Make the fish skewers on the griddle or in a very hot frying pan with a little olive oil, watering the skewers with the remaining marinade until the fish is golden on both sides.
