In the hottest months, vegetable salads are an ideal resource for healthy eating and for taking advantage of all the properties of these foods without having to prepare a stew or stew. Ingredients to make sweet and sour chickpea salad:
- 300 grams of cooked chickpeas
- 2 carrots
- 1 spring onion
- 2 tablespoons of raisins
- 1 bay leaf
- 2 tablespoons balsamic vinegar
- 2 tablespoons of olive oil
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 handful of fresh parsley
How to make Sweet and Sour Chickpea Salad:
We gather all the ingredients to prepare the sweet and sour chickpea salad. Sauté the julienned onion with a little olive oil over medium heat. Let cook for a couple of minutes.
Peel the carrots, cut them into not very thin slices and add them to the sauce. Let them cook with the spring onion for another 3 minutes to continue with the sweet and sour salad. We salt and pepper. Add the raisins and bay leaf, and mix well so that they hydrate with the rest of the ingredients. Let cook for 3 minutes.
Next, we take the chickpeas out of the pot, wash them, let them drain and add them to the sauce. If you don’t have canned cooked chickpeas, you can always use dried chickpeas by cooking them previously. We put a little more salt if necessary so that the vegetable salad is to our liking. Finally, we add the balsamic vinegar to give that sweet and sour touch to the salad and let the alcohol evaporate a little. Cook over medium heat for 5-8 minutes.
