This popular Argentinian sweet is used to create the classic vigilante dessert, in which the sweet potato is combined with a portion of fresh cheese. It is said that this name arose because it is a dessert chosen by the guards of the blocks, since it did not require cutlery to be enjoyed. Originally, quince jelly was combined with cheese and later it was extended to sweet potato. Currently, it is a common gastronomic rivalry: quince jelly versus sweet potato.

How to make Sugar Free Sweet Potato:
- To start preparing the sugar free sweet potato recipe, you must first cook the sweet potato.
- To do so, first carefully wash the skin and prick it with the help of a fork or knife. Cook it for about 5 minutes in the microwave.
- After this time, turn it over and cook it for another 5 minutes. Being careful not to burn yourself, peel it.
- Then process it until you get a ready puree. We recommend doing it little by little so that there are no parts of the sweet potato left unprocessed.
- Add the sweetener and vanilla essence and reserve it. You can add sweetener until you get the sweetness to your liking.
- To continue with the preparation of the homemade sweet potato jam, hydrate the gelatin.
- Mix it with 100 cc of the total water of the preparation. Reserve the remaining 150 cc for later as you will need it.

- Tip: at the end of the recipe we tell you how to replace the gelatin with an option suitable for vegans.
- Mix 1 tablespoon of the puree together with the gelatin to integrate them.
- Then, mix the preparation with the rest of the puree that you have previously prepared, you must also mix the remaining 150 cc of water.
- If you want to make a marbled confection, you should separate some of the puree at this point and mix it with 1 tablespoon of bitter cocoa.
- There is little left to get the sweet potato candy ready!
- Prepare a mold in the way you want by lining it with plastic wrap. Pour the sweet into the mold and cover it.
- Cool it for at least 4 hours in the fridge until it takes shape.
