Ingredients to make Strawberry Atole:

  1. 2 cups of Strawberries
  2. 2 tablespoons of corn starch
  3. ½ cup of Sugar (100 grams)
  4. 1 pinch of bicarbonate
  5. 500 milliliters of milk
  6. 1 cup of Water (240 milliliters)

How to make Strawberry Atole:

  • The first step in making the strawberry atole will be to gather and measure all the necessary ingredients.
  • If you use fresh strawberries, wash them very well and disinfect them, although if you can’t get them fresh, feel free to use frozen strawberries from the supermarket.
  • Tip: You can combine different fruits to prepare this drink, blackberries, blueberries or raspberries are an excellent combination for this atole.
  • Remove the stem of the strawberries, cut them into four to make it easier to cook them and place them in a saucepan.
  • Add the sugar and heat the pot until the strawberries start to look like some kind of thick jam.
  • When it reaches this point, reserve the preparation and let it cool slightly before blending.
  • While the strawberries cool, place the milk and baking soda in another saucepan and bring the mixture to a boil.
  • Trick: Cow’s milk can be replaced by any other vegetable milk that you like, use almond milk, soy milk, etc.
  • Blend the strawberries with half a cup of water until you get a thick puree but without very large pieces or lumps so that it integrates perfectly with the milk.
  • To continue with the preparation of the atole, add the strawberries that we blended to the milk and mix until it is perfectly incorporated and comes to a boil again.
  • Dilute the cornstarch in the rest of the water (1/2 cup). It is important to dilute very well to prevent lumps from forming in the preparation.
  • Tip: The atole can also be thickened with diluted corn dough, if you want it to have a more traditional flavor.
  • Add the corn starch to the atole and continue cooking for a few more minutes until the drink thickens.
  • Tip: If it is necessary to add more diluted corn starch you can do it at this time until you get the texture you like.
  • Serve the strawberry atole for your breakfast, snack or dinner. This drink is ideal for celiac because it does not contain gluten, in addition to the fact that it is very comforting to drink it as hot as possible on cold mornings or nights.
