Ingredients to make Strawberry and Mozzarella Salad:
- ½ oak leaf lettuce
- Arugula
- 250 grams of Strawberries
- 150 grams of Buffalo Mozzarella
- 2 tablespoons of pine nuts
- 1 tablespoon soy
- 2 tablespoons of EVOO
- 1 tablespoon of Vinegar of Modena
- 2 tablespoons of sugar
- 1 pinch of salt
How to make Strawberry Mozzarella Salad
In order to enhance the flavor of the fruit, two hours before preparing the salad we will put the strawberries cut into squares to macerate in the balsamic vinegar and a teaspoon of sugar. On the other hand, an hour before preparing the dish we will have to submerge both the oak lettuce and the arugula in water to give it more consistency and freshness. After the two hours of rest of the strawberries, we can get down to work with the preparation of the fresh salad. To do this, we take a pan, add a tablespoon of water, another of sugar, put it on the fire and let the sugar dissolve until it forms a caramel. Then, add the pine nuts and stir until they are well covered by the caramel. Remove the preparation from the heat and let it cool on parchment paper.
To prepare the strawberry salad dressing, mix the oil with the soybean, the balsamic vinegar and the salt, always keeping in mind that the soybean provides a large amount of salt. We emulsify this mixture so that all the ingredients are well integrated.
Finally, we cover the source with the lettuce and arugula, previously removing the moisture. On them, we spread the sliced mozzarella, the pieces of macerated strawberries and cover it with the previous dressing. Finally, we add the pine nuts and voila!
