Stir-fried Vegetables with Tofu Recipe

Ingredients to make Stir-fried Vegetables with Tofu:

  • 150 grams of Tofu
  • ½ yellow bell pepper
  • 1 green pepper
  • 1 Eggplant
  • 1 spring onion
  • 1 Carrot
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 jet of olive oil
  • 100 grams of corn flour
  • 1 splash of soy sauce

How to make Stir-fried Vegetables with Tofu:

1.We gathered all the ingredients to make the recipe for stir-fried vegetables with tofu.

2.Sauté the onion in a pan with a little olive oil. Let them cook over medium heat for 3 minutes.

3.Cut the rest of the vegetables as indicated in the image, add them to the pan and season with salt and pepper. We cook for 3 more minutes to continue with the vegan recipe.

4.We wash the eggplant, cut it into squares and add it to the sauce. Add a little more salt and ground black pepper. Let cook for 4 minutes over medium heat.

5.Cut the tofu into squares, coat it with cornmeal and fry it in plenty of olive oil. When removing it from the heat, place it on absorbent paper to remove excess oil.

6.Add the fried tofu to the sautéed vegetables and stir so that the tofu takes on the flavor of the vegetables. Tofu, by itself, does not have any characteristic flavor, but it takes on the aroma of the ingredients with which it is cooked very well.
