Ingredients to make Stewed Tuna:
- 300 gr. of fresh tuna in a piece without bones.
- 1 lemon
- 2 onion
- 1 leek
- 1 chili
- 1 piece of celery
- 1 small red bell pepper
- 1 bay leaf
- 2 sprigs of parsley
- 4 black peppercorns
- 1 pinch of chopped oregano
- 1 teaspoon paprika
- 1 teaspoon vinegar
- 2 garlic cloves
- 1 glass of crushed tomato
- 1 teaspoon Worcestershire willow
- 1 kg of potatoes

How to make Stewed Tuna:
- Remove the skin and the dark parts of the tuna, wash it, rub it with the lemon and dry it.
- Put it in a casserole and pour water to cover it.
- Cut the onion into quarters and add it to the casserole.
- Put the leek and celery.
- Cut the pepper in two, remove the seeds and add it to the casserole.
- Add the bay leaf and parsley.
- Add the peppercorns and a little salt.
- Cover the pot and cook over high heat for about 15 minutes.
- Remove the tuna from the heat and let it cool in the broth.
- Now cold, drain and cut the tuna into not very large cubes.
- In a pot, heat oil with a couple of crushed garlic.
- Chop the remaining onion, put it in the pot and cook until softened.
- Add the crushed tomato.
- Add the chili and season. Cook over medium heat for about 15 minutes.
- Meanwhile, peel and cut the potato into small cubes.
- Book.
- Add the tuna and cook 5 more minutes
- Add the paprika, stir a little and without letting it burn, pour in 1 liter of water.
- Add the Worcestershire sauce and vinegar.
- Sprinkle with oregano and season.
- Add the cut potatoes.
- Cover the pot and cook for about 15 minutes over high heat.
