Stewed Tripe Recipe

Ingredients to make Mandingo Stew:

  • 3 lbs. tripe
  • 3 tablespoons tomato paste
  • 2 tablespoons of vinegar
  • 1 onion diced
  • 1 green pepper
  • 3 small tomatoes
  • ½ tablespoon oregano
  • a few basil leaves
  • 1 tablespoon olives and capers
  • 1 can of chickpeas
  • 1 chicken or vegetable cube
  • 2 tablespoons of oil,
  • A little chopped fresh coriander

How to make Tripe Stew:

  1. Boil tripe in a pressure cooker, if you have one, until it softens well.
  2. When it is already soft, remove it from the water and reserve it.
  3. Chop the whole tripe into small pieces and put it back in its water.
  4. In a frying pan, fry all the ingredients in oil and then mix the already boiled and chopped tripe, as well as the can of chickpeas.
  5. Let simmer for about 30 minutes over low heat until thickened
  6. Accompany with white rice and avocado.
