Ingredients to make Mandingo Stew:
- 3 lbs. tripe
- 3 tablespoons tomato paste
- 2 tablespoons of vinegar
- 1 onion diced
- 1 green pepper
- 3 small tomatoes
- ½ tablespoon oregano
- a few basil leaves
- 1 tablespoon olives and capers
- 1 can of chickpeas
- 1 chicken or vegetable cube
- 2 tablespoons of oil,
- A little chopped fresh coriander
How to make Tripe Stew:
- Boil tripe in a pressure cooker, if you have one, until it softens well.
- When it is already soft, remove it from the water and reserve it.
- Chop the whole tripe into small pieces and put it back in its water.
- In a frying pan, fry all the ingredients in oil and then mix the already boiled and chopped tripe, as well as the can of chickpeas.
- Let simmer for about 30 minutes over low heat until thickened
- Accompany with white rice and avocado.
