Stewed Tomato Casserole Recipe

Ingredients to make STEWED TOMATOES CASSEROLE:

  • 300ml water
  • 50ml cider
  • 500 g tomatoes of the pear variety
  • 2 onions
  • 2 garlic cloves
  • 3 corvettes
  • 2 carrots
  • 1 turnip
  • oregano
  • 25ml olive oil
  • Salt
  • Pepper

How to make STEWED TOMATOES CASSEROLE:

  1. Wash and dry the tomatoes. Peel and finely chop the onions and garlic. Peel and chop the corvettes, carrots and turnip.
  2. Step 2 in a clay pot, stew the onions and garlic with a tablespoon of oil, when they begin to be transparent, add the rest of the vegetables.
  3. Season with salt, pepper and oregano, sauté for a few minutes and add the water and cider, let it cook over low heat
  4. Step 3 when the tomatoes are ready, remove the pot from the heat and add a few sprigs of fresh oregano, if desired it can be served with slices of toasted bread.
