Stewed Red Beans Recipe

Ingredients to make Stewed Red Beans:

  • For 4 people:
  • 250 grams of red beans
  • 1 onion
  • 1 carrot
  • 2 cloves of garlic
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 level tablespoon of flour
  • 1 deciliter of olive oil
  • Salt

How to make Stewed Red Beans:

1.Rinse the beans in cold water and once clean, leave them to soak in cold water overnight.

2.The next day, taking advantage of the soaking water itself, we put them in a pot and add cold water until they are covered and a little more.

3.Add the onion cut in half, the peeled carrot, the whole peeled garlic cloves, the bay leaf and a splash of oil.

4.Let them cook gently and slowly, making sure they are always covered with water, adding a little cold water when necessary.

5.When they are ready, we remove them from the fire.

6.Remove the onion, carrot and bay leaf.

7.We pass the onion and carrot through the food mill and add the purée to the beans.

8.In a frying pan, fry the flour in a little oil, remove from the heat and add a teaspoon of paprika and quickly add a little cooking broth and pour over the beans.

9.Season with salt and cook for 5 more minutes.

10.Before serving, it is convenient to let them rest for 10 minutes.
