Stewed rancid conger eel recipe

Ingredients to make stewed rancid conger:

  • A kilo of rancid conger eel
  • 2 green bell peppers
  • 2 garlic cloves
  • 1 onion
  • 1 ripe tomato
  • 1 bay leaf
  • 1 dried pepper
  • 1 teaspoon paprika
  • 1 pinch of saffron
  • salted
  • oil
  • 1 tablespoon of flour
  • red peppers
  • 3 eggs
  • Parsley

How to make Stewed Stale Conger:

  1. The conger eel, chopped, we soak it the day before.
  2. We cook the conger eel with fresh water and once cooked we reserve it together with half a liter of water from its own cooking.
  3. We prepare a sauce in this order: green peppers, garlic, onion and tomato; add the diluted flour with a boiled egg yolk, paprika, saffron, parsley, dry pepper, bay leaf and water.
  4. When everything starts to boil, add the previously cooked conger eel, and the cup of broth.
  5. Let cook until it is ready, and add salt if necessary.
  6. We serve the table in the same clay pot where it was stewed, garnished with half boiled eggs and some strips of roasted red pepper.
