Ingredients to make Stewed Potatoes with Vegetable Chicken and Vegetables:

  • 7 potatoes
  • 1 large potato
  • 250 grams of vegetable chicken
  • 1 handful of raisins
  • 1 handful of dried cranberries
  • 1 red bell pepper
  • 1 leek
  • 1 cup of natural crushed tomato
  • 1 tablespoon paprika
  • 1 tablespoon of cinnamon
  • 2 slices of plain pineapple
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1 pinch of black pepper
  • 1 splash of olive oil

How to make Stewed Potatoes with Vegetable Chicken and Vegetables:

Peel the potatoes and sweet potatoes, cut them into medium pieces and cook them in salted water until soft. Drain and reserve. Cut the vegetable meat or seitan into not very thick strips.

Add the paprika and cinnamon, stir well and cover the seitan with the vegetable broth. Let cook over low heat for 10-15 minutes.

Remove the pot from the heat and add the crushed tomato, diced green bell pepper, finely chopped leek, cooked potatoes and sweet potatoes, diced pineapple, raisins, cranberries, salt and pepper. Mix everything well and transfer the mixture to a large baking tray.

Preheat the oven to 180ºC and bake the potatoes with vegetables and vegetable meat for 20 minutes.

Serve the dish with some fresh coriander on top. These stewed potatoes with meat and vegetables, 100% vegan and inspired by the original African recipe, are perfect to accompany all kinds of dishes or serve with a salad or other dish of African origin.
