Ingredients to make Stewed Monkfish:
- 2 kilos of monkfish
- 150 grams of oil
- 200 grams of water
- 1 tablespoon dark chocolate
- 1 tablespoon vinegar
- 1 pinch of salt
- 1 pinch of pepper
- 1 bay leaf
How to make Stewed Monkfish:
- Cut the monkfish, flour it and fry it. In a mortar, crush the garlic and parsley and add the melted chocolate in two tablespoons of oil, vinegar and water.
- Pour everything over the monkfish placed in a saucepan; add half a bay leaf, salt, and pepper.
- Cover well and cook for half an hour. The pieces are removed to a fountain; the sauce that is served on top is strained.
