Stewed lentils with rabbit recipe

Ingredients to make Stewed Lentils with Rabbit:

  • 250 grams of dried lentils
  • ½ Rabbit
  • 4 potatoes
  • 1 fresh sausage
  • 1 ham bone
  • 1 head of Garlic
  • 2 bay leaves
  • 1 onion
  • ½ green pepper
  • ¼ red bell pepper
  • 1 teaspoon of sweet paprika
  • 1 pinch of salt

How to make Stewed Lentils with Rabbit:

1.We prepare all the ingredients to prepare our lentil stew. Chop all the vegetables finely, leave the potatoes in wedges and wash the meat very well, which must already be chopped.

The recipe is marked for 3 people but it all depends on the size of the portions, in this case we refer to regular size portions.

2.When we have all the ingredients ready, we seal the rabbit in a pot. To do this, heat the olive oil and when it is hot, add the rabbit and fry until golden brown.

3.Next we add the chorizo, the lentils, the bay leaf, the head of garlic and the ham bone. We remove everything so that the flavors are integrated.

4.Immediately after, add the water and let it cook over medium heat.

5.Meanwhile, we prepare a sauce with the onion and the peppers, we sauté everything and when it is well done we add the sweet pepper and stir well.

6.Add a little water from the lentils to the sauce and mix well.

7.Then we can integrate it into the cooking of our stewed lentils. Stir everything well and continue cooking over medium heat.

8.When it comes to a boil we can add the chopped potatoes. If you want to add more vegetables, like squash or carrots, you can do so at this step.

9.Next, we rectify the seasoning with a pinch of salt to taste and let the lentils with rabbit cook, cooking for an hour and a half over medium-low heat.
