Standing Faber Recipe

Ingredients to make Faber stop:

  • of peeled beans
  • diced potatoes
  • 150g onion cut in brunoised (to tiny dice)
  • 1 or 2 tomatoes, peeled, seeded and crushed
  • 1/2 dl of oil (And don’t put any oil on me 0=BD)
  • 250g salt pork rib
  • 100 g streaky bacon, I like to put it on the cheek side
  • 1 piece of salty nose.
  • 1 sausage
  • 1 small piece of longaniza or sobrassada
  • 3 or 4 white cabbage leaves
  • 150g medium noodles

How to make standing Faber:

1.You soak the peeled beans the day before, in quality water.

2.You also put salted meats to soak for half an hour and then wash them well and drain them.

3.With the onion and tomato, make a sauce with part of the oil, add the beans and cover the meat with cold water and cook over low heat.

4.Halfway through cooking, add the potatoes, the cabbage leaves and the oil.

5.And you let it cook until it is tender, we remove the meat to remove the bones, and we make, with the help of the blender, a somewhat clear purée with the rest of the ingredients.

6.We add the meat again, add sobrassada and botifarrón and the noodles (There are people who cook them separately; I don’t see it as essential).

7.We boil 10-15 min. over low heat and correct the point of salt at the end.
