Ingredients to make Auyama Risotto:
- 1 K of auyama peeled and cut into pieces
- 50g butter
- 4 tbsp. Of olive oil
- 1 liter of chicken broth
- 2 diced onions
- 4 garlic cloves, crushed
- 2 cups of arborio rice
- 1 cup Parmesan cheese cut into flakes
- Salt
- pepper to taste
How to make Auyama Risotto:
- Peel and cut the auyama into pieces. Put it in water to boil for 15 minutes and drain it. Crush it with a shaker until it becomes a puree and add the butter.
- Sauté the crushed onions and garlic in olive oil. Place the rice in a pot and sweat it with the previous sauce. Heat the broth well, add it to the rice and stir constantly with a wooden paddle until al dente.
- Add the pumpkin puree and keep stirring. Add salt and black pepper to taste. It is served very hot and Parmesan cheese flakes are added to each plate.
