Squash risotto recipe

Ingredients to make Auyama Risotto:

  • 1 K of auyama peeled and cut into pieces
  • 50g butter
  • 4 tbsp. Of olive oil
  • 1 liter of chicken broth
  • 2 diced onions
  • 4 garlic cloves, crushed
  • 2 cups of arborio rice
  • 1 cup Parmesan cheese cut into flakes
  • Salt
  • pepper to taste

How to make Auyama Risotto:

  1. Peel and cut the auyama into pieces. Put it in water to boil for 15 minutes and drain it. Crush it with a shaker until it becomes a puree and add the butter.
  2. Sauté the crushed onions and garlic in olive oil. Place the rice in a pot and sweat it with the previous sauce. Heat the broth well, add it to the rice and stir constantly with a wooden paddle until al dente.
  3. Add the pumpkin puree and keep stirring. Add salt and black pepper to taste. It is served very hot and Parmesan cheese flakes are added to each plate.
