Spring Rolls with Quinoa Recipe

Spring rolls are ideal to have as an appetizer or to organize a light cocktail-type dinner accompanied by other tapas. Unlike the typical fried rolls, we have made some Asian appetizers with rice paper (which adds fewer calories).

These spring rolls with quinoa that we have prepared have a very fresh flavor thanks to the aromatic herbs and vegetables. On the other hand, the quinoa gives the dish a delicious crunchy texture. We hope you like them as much as we do!

Ingredients to make Spring Rolls with Quinoa:

  1. 50 grams of Quinoa
  2. 4 cooked prawns
  3. 1 carrot
  4. 1 tomato
  5. 1 handful of cashew nuts
  6. 4 rice papers
  7. 1 pinch of salt
  8. 1 pinch of grated ginger
  9. 1 splash of olive oil
  10. 1 pinch of fresh Cilantro
  11. 1 pinch of fresh mint
  12. 1 splash of rice vinegar

How to make Quinoa Spring Rolls:

  • We gather all the ingredients to make the spring rolls with quinoa.
  • Cook the quinoa in plenty of boiling water, following the manufacturer’s instructions.
  • Peel the carrot and cut it into thin sticks. On the other hand, we wash the tomato and cut it into small pieces. Reserve the vegetables to continue preparing the spring rolls.
  • Next, we peel the cooked prawns and reserve them together with the vegetables. Prawns are a seafood that has a lot of protein.
  • We prepare a dressing with olive oil, grated ginger, salt, a little rice vinegar and chopped fresh mint.
  • Once the quinoa is cooked, drain it, let it cool and mix it with the dressing, the chopped vegetables and the prawns. We already have the filling for the Asian rolls ready!
  • To prepare the spring rolls with quinoa, we hydrate the rice paper in hot water. To do this, we follow the manufacturer’s instructions. It is convenient to put each rice paper one by one and prepare a roll each time. Otherwise the papers would be too soft and difficult to handle.
  • We assemble the spring rolls with quinoa one by one, putting a little filling at one end of the rice paper and rolling little by little. If necessary, we help ourselves with transparent paper to be able to roll better. Once finished, we cut the spring rolls into two portions each.
