Ingredients to make Spring Rice:
- 2 cups of rice of your choice
- 1 cup spring vegetables (corn, peas, beans, carrot)
- 1 pinch of salt
- 1 pinch of Pepper
How to make Spring Rice:
- Prepare all the ingredients to prepare the spring rice. You can buy the mixture of frozen vegetables, or select fresh ones to your liking, clean them and chop them finely.
- In a medium saucepan, add a dash of sunflower oil. Put the two cups of rice with a finely chopped clove of garlic to give it more flavor and salt (the amount you want). Add 4 cups of water and cook the rice as normal. Once the rice is done, remove and reserve.
- In a separate pot, bring water to a boil and, once it reaches the boiling point, add the spring vegetables. Let cook for 5-10 minutes maximum. Remove the vegetables and stop cooking with cold water to prevent them from overcooking.
- In a large pot, add the cooked rice and vegetables. Mix well so that all the ingredients are integrated.
- Serve the spring rice, you can accompany it with any dish you want such as grilled chicken breast, smoked salmon or an option suitable for vegetarians such as chickpea falafel.
