Ingredients to make Spinach Soufflé:

  • 2 cups of raw spinach leaves
  • 2 eggs
  • ¾ cup of milk (180 milliliters)
  • ½ onion
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1 tablespoon of wheat flour
  • 1 handful of grated Parmesan (or other) cheese
  • 1 pinch of black pepper
  • 1 pinch of salt

How to make Spinach Soufflé:

Beat all the ingredients in a mixer or electric blender, putting the cheese, salt and pepper to taste, and leaving the spinach for the end so that they are not too finely ground.

Tip: If you prefer to use frozen spinach in this recipe, you must defrost it first and drain it very well.

Distribute the easy spinach soufflé mixture over the previously spread and floured ramekins, or pour it onto a baking tray or tray if you do not want it in individual molds.

Sprinkle the Parmesan cheese to your liking on top and cook the spinach soufflé in the oven at 180 ° C for 20 minutes or in the microwave at maximum power and in 3 cycles of 1 minute so that it cooks well.

Tip: If you make the spinach soufflé in the microwave, the final consistency will be similar to a pudding. It will be lighter in the oven, so it is the best option if you are not in a hurry.

After cooking, serve the quick and easy spinach soufflé immediately, as it tends to go down as it cools.
