Spinach is mostly made up of water. It is one of the vegetables that contains the most protein and is rich in fiber, being very beneficial for our health. It is an excellent natural source of vitamins (A, C, E, K, B6, B and B1) and folate (vitamin B9) and minerals (calcium, iron, potassium, magnesium, manganese and phosphorus). It is also rich in antioxidants.

Ingredients to make Spinach Pudding:
- 1 package of spinach
- 1 onion
- 1 clove garlic
- 250 grams of ricotta
- 2 eggs
- 50 grams of grated cheese
- 3 tablespoons of breadcrumbs
- Salt
- Olive oil
- Oregano
How to make Spinach Pudding:
Wash the spinach leaves well and separate the undesirable parts.
Trick: You can use chard leaves, removing the stems.
Cut the spinach and cook it in water and salt until it is tender. Strain and let cool. Once cool, chop the leaves and reserve. Chop the onion and garlic. Lightly sauté in olive oil and add salt to taste.
In a container place the sautéed with finely chopped spinach. Add the lightly beaten eggs and ricotta. Add the grated cheese. Season with salt and pepper, add the oregano and mix well all the preparation of the spinach and ricotta pudding.
Tip: You can add mozzarella cubes instead of grated cheese.
Grease a loaf pan (you can use spray oil) and sprinkle with the breadcrumbs. Pour the preparation and spread a little more breadcrumbs on top.
Bake at 180°C for 40 minutes or until a knife inserted comes out dry and clean. To unmold, wait for the flourless spinach pudding to cool down and serve.
