  • 200 grams of grated Manchego cheese or any other that melts easily
  • 500 grams of chopped spinach
  • ½ piece of chopped onion
  • 2 eggs
  • 1 pinch of garlic powder
  • 1 pinch of salt
  • 1 pinch of pepper
  • 3 tablespoons of flour
  • 2 tablespoons vegetable oil
  • 1 liter of water

How to make Cheesy Spinach Pancakes:

To start making these spinach and cheese pancakes, bring the water to a boil in a pot. When it is boiling, add the previously chopped spinach, cover and let it cook over low heat for 5 minutes. Remove from heat and, with the help of a strainer, drain all the water and let cool.

Trick: It is very important that as much water as possible is drained so that, when making the pancakes, they do not break.

While the spinach is cooling, in a pan fry the onion with a little oil until it looks golden brown or transparent. Once ready, remove from the pan and reserve.
