Ingredients to make spinach noodles with sauce:
- 375 grams of spinach noodles
- 4 units of ripe tomato
- 2 units of Shallot
- 1 clove garlic
- 125 grams of plain yogurt
- 150 grams of brie cheese
- 1 pinch of thyme and black pepper
- 1 pinch of pink pepper
- ½ teaspoon of Sugar
- 1 pinch of salt
- 1 splash of olive oil
How to make Spinach Noodles with Sauce:
- Cook the pasta as you normally do, until al dente.
- On this occasion we have refreshed it after draining it to have a fresher dish at the same time that we cut the cooking of the pasta.
- Put a little olive oil in a pan and peel and chop the shallots and the garlic clove.
- First, poach the shallot over low heat, meanwhile wash the tomatoes and cut them into wedges.
- When the shallot is tender add the garlic, and in two minutes add the tomatoes, the thyme and season to taste, also add a pinch of sugar to balance the acidity.
- Sauté until the tomato begins to be tender, then add the yogurt, mix well and add the chopped brie cheese.
- Turn off the heat and mix carefully so that it melts and the cheese and tomatoes retain their shape.
- Make a nest with the spinach noodles and serve the tomatoes with brie cheese in the center.
- Finish by sprinkling some pink pepper and a drizzle of olive oil over the paste. Good appetite!
