Spinach and Wheat Salad with Balsamic Vinaigrette Recipe

  • 60 ml balsamic vinegar
  • 20g white sugar

How to make Spinach Wheat Salad with Balsamic Vinaigrette:

List all the ingredients. Cut the onion, cucumber and tomatoes into small squares, the latter two without seeds. In a pot with boiling water and salt, add the spinach for 1 minute. After that time, remove the spinach and immediately add it to a bowl of ice water, this helps stop the cooking and intensifies the color of the spinach. Leave it for 1 minute, drain and reserve. Separately, hydrate the American wheat with warm water, leave it to rest until the water is absorbed and the wheat is al dente. For the vinaigrette, in a bowl, add the vinegar, the sugar, a pinch of salt and pepper, until you obtain a homogeneous mixture. Add the olive oil in the form of a thread, while beating quickly. It is an unstable mixture, so it should always be beaten before use. Mix all ingredients season with salt and pepper. Serve in a deep dish and cover with the vinaigrette.
