Ingredients to make Spicy Tongue:

  • 1 tongue of 1 kg.
  • Enough water to cook the tongue
  • 2 cup(s) onion(s) finely chopped
  • 1 1/2 teaspoon(s) chili paste
  • 4 tablespoon(s) oil
  • 1 cup(s) tomato(s) peeled and finely chopped
  • 1 teaspoon(s) ground cumin
  • 1/2 cup(s) finely chopped parsley
  • 1 teaspoon(s) oregano
  • 1 cup(s) peas
  • 2 caluga(s) meat broth
  • 4 cup(s) water
  • 8 medium potato(s), peeled and cooked
  • 2 teaspoon(s) finely chopped parsley, to sprinkle on top of the chili pepper
  • salt and pepper to taste

How to make Spicy Tongue:

  1. Before putting the tongue to cook, beat it.
  2. Place a pot of water over high heat and when it boils, put the tongue and cook for about 2 1/2 hours or until the tongue is soft.
  3. Then remove from the pot, let cool, peel and cut into thin slices.
  4. Place the oil in a pot over high heat, when it is hot add the onion, let it brown and add the tomato, parsley, chili pepper, cumin, oregano, pepper, peas, the calugas of meat broth and finally the water; mix a little and let cook 3/4 hour approx.
  5. Or until the onion and peas are cooked through. It should turn out a thick sauce. Season if necessary.
  6. Then add the sliced ​​tongue to the preparation, mix and let it boil a little until the tongue takes on the flavor of the sauce. Serve with the boiled potatoes.
