How to make Spaghetti with Orange Sauce and Dijon Mustard:
- Chop the onions and garlic into very small pieces. Add extra virgin olive oil to the casserole and fry everything over low heat for about 10 minutes until the onion is almost transparent.
- Squeeze the oranges and heat a saucepan with their juice. Add 1 tablespoon of sugar and let it reduce for 12 minutes over medium-low heat. When it starts to look like syrup, add 3 tablespoons of Dijon mustard and mix the sauce well. Let it rest for two minutes before adding it to the meat.
- Cut the bacon and the chicken breast into more or less equal pieces, add it to the onion and garlic and brown for 2-3 minutes. Add the orange sauce and raise the heat until it starts to boil. Let the sauce reduce for about 10 minutes.
- Season with salt and pepper if necessary, since it has bacon. We remove everything with a wooden spoon and lower the heat, 2 more minutes, we return to remove everything gently. Once we already have the reserved sauce to later join them with the spaghetti.
- Making the spaghetti the first step is to have the sauce before the pasta touches the water. The orange and mustard sauce should wait for the spaghetti and not the other way around. Heat a liter of water in a saucepan for every 100g. Pasta. When it starts to boil 1 handful of kinds of salt, about 2 tablespoons per 500 gr. Pasta.
- Then we add the pasta, always all together. Stir with a wooden spoon so that the spaghetti does not stick and remain loose. Let cook for about 9 minutes. This is how we get what he calls pasta (al dente) or at its right point, that is, that it does not go too far. Once the time has elapsed, drain the pasta immediately and combine it with the sauce.
