Spaghetti with Beetroot Recipe

Ingredients to make Spaghetti with beetroot:

  1. 1 glass of olive oil
  2. 2 minced garlic cloves
  3. 500 grams of spaghetti
  4. 1 chilli
  5. 8 red beets, cooked
  6. 1 pinch of salt

How to make Spaghetti with beets:

  • Peel and cut the beets into not very small pieces.
  • In a container large enough to fit all the pasta, put the olive oil, the chilli or cayenne pepper and the garlic.
  • Heat until the oil starts to sizzle (the garlic doesn’t have to take much color).
  • Add the beetroot pieces and cook just until heated through.
  • Cook the pasta in plenty of hot salted water until almost al dente, still a bit firm.
  • Drain but reserve as a glass of cooking water.
  • Put the spaghetti in the bowl with the beets, add the reserved water and heat over low heat, stirring constantly, until the pasta is a uniform color.
  • It should be done in two minutes tops.
