Ingredients to make Spaghetti with beetroot:
- 1 glass of olive oil
- 2 minced garlic cloves
- 500 grams of spaghetti
- 1 chilli
- 8 red beets, cooked
- 1 pinch of salt
How to make Spaghetti with beets:
- Peel and cut the beets into not very small pieces.
- In a container large enough to fit all the pasta, put the olive oil, the chilli or cayenne pepper and the garlic.
- Heat until the oil starts to sizzle (the garlic doesn’t have to take much color).
- Add the beetroot pieces and cook just until heated through.
- Cook the pasta in plenty of hot salted water until almost al dente, still a bit firm.
- Drain but reserve as a glass of cooking water.
- Put the spaghetti in the bowl with the beets, add the reserved water and heat over low heat, stirring constantly, until the pasta is a uniform color.
- It should be done in two minutes tops.
