Spaghetti with Anchovies and Olives Recipe

Pasta is one of those foods that can be completely changed just by applying a sauce. With this easy recipe we will make a traditional pasta sauce, a homemade Neapolitan sauce made from olives and anchovies. Avoid monotony in the kitchen and prepare something different with the ingredients you always have at home.

Ingredients to make Spaghetti with anchovies and olives:

  1. 300 grams of Spaghetti
  2. 1 can of Anchovies
  3. 2 tablespoons of black olives
  4. 80 grams of Mushrooms
  5. 4 units of red tomatoes
  6. 1 unit of white onion
  7. 2 garlic cloves
  8. 5 basil leaves
  9. 30 milliliters of olive oil
  10. 1 pinch of salt
  11. 1 pinch of Pepper

How to make Spaghetti with anchovies and olives:

  • Before making this pasta recipe, the first step is to get all the ingredients ready.
  • In a pot with boiling water, add the tomatoes by making a cross with a knife on top and cook for 5 minutes. Once they are ready, peel, blend and reserve the juice.
  • In a pot with oil, fry the finely chopped onion and the marinated garlic over low heat until the onion is translucent.
  • Add tomato juice and basil, cook over medium heat until boiling, about 5 minutes.
  • Cut the mushrooms into slices, the black olives in half and the anchovies finely.
  • Add the mushrooms and olives to the sauce, cover and cook over low heat for 20 minutes. After this time, add a pinch of sugar to regulate the acidity of the tomato.
  • Finally add the anchovies and mix everything very well, correct the seasoning with salt and pepper if necessary. Remember that anchovies are salty, so you have to be careful with the salt when using it.
  • For the pasta in a pot with boiling water and a teaspoon of salt, add the spaghetti and cook for 10 minutes until al dents, drain and reserve.
  • It is time to serve the spaghetti with anchovies and olives, sprinkle some Parmesan cheese and accompany with some garlic bread at lunchtime.
