Making avocado pesto with pasta is not complicated at all and in this recipe we explain how to do it. You can use spaghetti or any other pasta but to accompany a pesto long pasta is better and never stuffed.
Ingredients to make Avocado Pesto Spaghetti:
- 2 or 3 zucchini
- tomatoes, cherry best (8 or 10)
- 1 clove garlic
- half avocado
- 20g basil
- a handful of nuts
- olive oil, extra virgin best
- pepper and salt to taste for the sauce
How to make Avocado Pesto Spaghetti:
- Sauté the corvettes made into spaghetti with a little oil. I use the Micro plane brand device. Although it seems a lot, the volume is reduced. If salt is added, do it at the end, so that it does not release more water. If you don’t use zucchini, which is how it suits me better, you can use another vegetable, pepper for example.
- Meanwhile I make the sauce in the food processor: avocado, garlic (no more than one or it will be repeated a lot), walnuts, and basil, a dash of oil and pepper and salt to taste.
- You will have to open it to stir it a bit and add oil until you get the texture that you like to accompany the pasta.
- Turn off the heat and add the sauce and tomatoes and mix. Ready! You already have this very rich and healthy dish, pasta with avocado pesto.
