Ingredients to make Spaghetti a la Carmen:
- 500 gr. of spaghetti
- 200 gr. tuna in oil
- 5 anchovy fillets
- 10 olives stuffed with pepper
- 1 tablespoon small capers
- 400 gr. chopped natural peeled tomato
- 75 dl. of olive oil
- 1 clove garlic
- salted
- Pepper
- oregano
How to make Spaghetti a la Carmen:
- For the preparation of the sauce, two casseroles are needed.
- In one, cook the chopped tomato pulp, with half the oil and the sliced garlic, without previously frying.
- Season with salt, pepper and oregano and cook over moderate heat for about 10 minutes.
- In the second casserole, heat the remaining oil over a very low heat, add the anchovies and stir them so that they dissolve quickly.
- Then add the shredded tuna, the halved olives and the capers.
- Mix and let it take flavor for a few minutes.
- Remove from the heat and pour the tomato sauce into the casserole.
- Let boil a few minutes.
- Season and remove from heat.
- Cook the spaghetti al dente
- Drain and place in a bowl, season with the sauce.
- To serve.
