Spaghetti a la Carmen Recipe

Ingredients to make Spaghetti a la Carmen:

  1. 500 gr. of spaghetti
  2. 200 gr. tuna in oil
  3. 5 anchovy fillets
  4. 10 olives stuffed with pepper
  5. 1 tablespoon small capers
  6. 400 gr. chopped natural peeled tomato
  7. 75 dl. of olive oil
  8. 1 clove garlic
  9. salted
  10. Pepper
  11. oregano

How to make Spaghetti a la Carmen:

  • For the preparation of the sauce, two casseroles are needed.
  • In one, cook the chopped tomato pulp, with half the oil and the sliced ​​garlic, without previously frying.
  • Season with salt, pepper and oregano and cook over moderate heat for about 10 minutes.
  • In the second casserole, heat the remaining oil over a very low heat, add the anchovies and stir them so that they dissolve quickly.
  • Then add the shredded tuna, the halved olives and the capers.
  • Mix and let it take flavor for a few minutes.
  • Remove from the heat and pour the tomato sauce into the casserole.
  • Let boil a few minutes.
  • Season and remove from heat.
  • Cook the spaghetti al dente
  • Drain and place in a bowl, season with the sauce.
