Mexican food is full of flavors and a very characteristic one is that of the famous al pastor preparations. Tacos al pastor, who can be made with meat, chicken or fish, are very popular, but the truth is that they can also be made vegetarian using textured soy.
Well, a dish that will allow you to discover the best of Mexican cuisine, within a vegetarian diet.
Ingredients to make Soya al pastor with achiote:
- 1 kilogram of dehydrated or textured soy
- 1 jet of oil
- 1 teaspoon of Achiote paste
- 1 pinch of garlic powder
- 2 cloves of 2 large garlic
- 1 onion
- 10 spring onions
- 10 Chalice (fresh papilla chili)
- 4 teaspoons of concentrated chicken broth
- 2 large papilla chilies
- 7 bay leaves
- 10 Lemons (juice)
- 1 pinch of salt
- 1 pinch of seasoning powder
- 1 pinch of thyme to taste
- 2½ cups of orange juice
- 3 Tomatoes
- 1 can of Chipotle
How to make Soya al pastor with achiote:
1.We start by preparing the textured soybeans. To do this, boil the soybeans with enough water for 30 minutes, add the bay leaves.
2.To make the marinade, devein the chalice and place the chills together with the papilla Chile in a pot with water. Cook this over low heat and boil with a piece of onion until soft.
Then, blend the deveined chalice together with the papilla peppers, 1/4 of the onion and the two large garlic cloves. Reserve.
3.To continue with the preparation of our soy al pastor, fry a large sliced onion in a large saucepan with plenty of oil. When they begin to turn transparent, add the chambray onions and continue with the sauce.
4.At this point we will have the boiled soybeans, strain and squeeze well. Add this to the pan along with the onions and season with a pinch of salt.
5.Fry the blended marinade in a separate saucepan with a few drops of oil until the sauce thickens. Then, season with a little thyme to taste, concentrated broth and salt. Reserve.
Remember that if you want the soy al pastor recipe to be vegetarian or vegan, you can use concentrated vegetable broth instead of using chicken broth.
6.We return with the soy, add the lemon juice and stir well. Then we add the garlic powder, the achiote and the seasoning. Once the soy is allowed to smoke, we add the marinade little by little so that the dish does not get too watery.
The idea is that the soy absorbs all the flavors and the liquid.
7.To make our soy al pastor sauce, we blend the rest of the marinade with the tomatoes and a medium can of chipotles.
8.This soy al pastor with achiote is ideal for preparing tacos or simply eating with some freshly made corn tortillas and a little Pico de Gallo and guacamole. To enjoy!
