Ingredients to make Soy Milanese:
- 1kg soy flour
- 1/4kg extra fine rolled oats
- 1/4kg of agglutinated flour
- 100 grams wheat germ
- 150 grams from Provencal
- 1 tablespoon of nutmeg
- Sea salt
- pepper to taste
How to make Soy Milanese:
1.Mix all the ingredients, add warm water to form a dough, sprinkle the surface where you will work and the rolling pin with flour, stretch the dough, once the necessary thickness is achieved (approx. 4 mm.), mark them and cut them to the size and the way you like.
2.Put ½ pot of water on the fire, when it boils, place the Milanese’s two at a time, (this is a pre-cooking), when they rise to the surface they should be removed with a slotted spoon and immediately they are coated with bread shredded gluten or super fine rolled oats.
3.Fry them back and forth until golden brown.
4.Sprinkle them with lemon juice before eating.
