How to make soy ceviche with tuna:

The first thing to do to prepare this soy ceviche with tuna is to prepare all the ingredients that we will need. We are going to start our preparation of soy with tuna by hydrating the textured soy: for this we place it in a saucepan with enough boiling water, add the garlic, a piece of onion and the bay leaves, and let it boil for approximately 10 minutes.

Once the soybeans are ready, we remove the garlic, the onion, and the bay leaves and squeeze them very well to remove all the water they may contain. We reserve a moment. Meanwhile we take the vegetables: the red onion, the Serrano pepper, the red tomato, the cucumber and the garlic, and chop them finely, we reserve a moment. As we can see in the following image. Now, once our soy is ready, we mix it with the tuna and integrate perfectly.

To the soy mixture with tuna we add the chopped vegetables and the ketchup sauce and mix again until everything is perfectly integrated. AND READY! We serve the soy ceviche with tuna accompanied by crackers or some delicious corn toast.
