Soupy Rice with Rabbit Recipe

Ingredients to make brothy rice with rabbit:

  1. 1 rabbit
  2. 400 grams of rice
  3. 1 unit of green pepper
  4. 2 cloves of garlic
  5. 2 tablespoons of fried tomato
  6. 1 dessert spoon of sweet paprika
  7. 1 splash of olive oil
  8. 1 pinch of salt
  9. 1½ liters of chicken or beef broth

How to make brothy rice with rabbit:

  • Cut the rabbit into medium pieces. Salt it. Cut the green pepper into small pieces and chop the garlic.
  • In a saucepan with a little oil, brown the rabbit pieces. When they are almost golden, add the chopped pepper, leave for a few minutes and when the pepper begins to take on color, add the chopped garlic.
  • Add the fried tomato and the spoon of sweet paprika, stir everything.
  • Add the chicken or meat broth, keep a little reserved in case more is needed. Let it cook for 10 minutes all together.
  • Add the rice, stir it to leave it distributed throughout the pan and let everything cook for about 15 minutes.
  • Salt test, rectify if necessary. Verify that the rice is ready and turn off. Let it rest for a few minutes. We taste the rice in case it is ready and turn it off. Let it rest for a few minutes and your rice with rabbit broth will be ready to serve.
  • Tip: If it is too dry or you like it soupier, you can add more broth. Add it hot so as not to stop cooking.
