Soupy Rice with Artichokes Recipe

The rice in broth with artichokes is a simple and quick dish to prepare. In addition, the sauce and vegetable broth provide a unique and delicious flavor. You should know that rice can be prepared in many ways and with a wide variety of ingredients, such as meat, fish, seafood or vegetables. In the latter case, it can be made with a wide variety of vegetables, however, the recipe that we propose contains artichoke as a star ingredient, a widely consumed and popular vegetable in our kitchen.

Ingredients to make brothy rice with artichokes:

  1. 350 grams of bomba rice
  2. 3 artichokes
  3. 1 onion
  4. 1 piece of leek
  5. 1 clove garlic
  6. 1½ liters of vegetable broth
  7. 3 tablespoons of crushed tomato
  8. 1 dessert spoon of saffron
  9. 1 splash of olive oil
  10. 1 pinch of salt

How to make Arroz caldoso con artichokes:

  • To start with the recipe for arroz caldoso con artichokes, you must first clean the artichokes. To do this, remove the leaves from the outside until you reach the tenderest part, the center. Then you cut off the ends. Clean they well and also remove the stems. Next, cut the artichokes into quarters and place them in a bowl with cold water and parsley or a few lemon slices so they don’t turn dark.
  • Peel and finely chop the onion, the leek and the garlic clove.
  • In a saucepan, add a splash of oil and, when hot, drain the artichokes well and add them to the saucepan. Let them fry for about 5 minutes and then add the leek and onion, let the ingredients poach.
  • When the vegetables begin to be poached, add the minced garlic clove and sauté for 1 minute together with the other ingredients. Next, add the natural crushed tomato, stir and leave for a few minutes until you see that the sauce is ready.
  • Add the rice and stir with the other ingredients. Then, cook a few minutes with the sauce.
  • In another container heat the vegetable broth, you can do it in the microwave. Next, when it is hot, add almost all of the broth, a little salt and the saffron, stir and leave over high heat for 7-8 minutes. Then, lower to medium heat until the rice is at its point. You can prepare the vegetable broth at home or buy it ready-made, you can also add water instead of broth.
  • If you notice that the broth evaporates a lot, you should add more broth or water, as you like.
  • When you notice that the brothy rice with artichokes and vegetables is almost ready, you should taste it and rectify if necessary. Let stand 5 minutes and serve immediately hot. To eat!
