Sole recipe with orange sauce and tarragon

Ingredients to make Sole with orange and tarragon sauce:

  • 4 sole portion
  • 100 grams of onion
  • 3 garlic cloves
  • The juice of three oranges
  • 1 chili
  • 1 teaspoon tarragon
  • 1 teaspoon parsley
  • a tablespoon of flour
  • salted

How to make Sole with orange and tarragon sauce:

  1. We take clean fillets of skin and bones from the sole, salt and reserve.
  2. We fry the onion cut into brunoises (finely chopped) and the garlic filleted and still not browned, and add the sprinkled flour.
  3. We stir everything well and add the orange juice, salt, chili and spices (tarragon and chopped parsley).
  4. When the sauce begins to thicken, add the sole, clean and skinless.
  5. Let cook over medium heat for about four minutes.
  6. We serve the soles together with the sauce and as an accompaniment some boiled potatoes.
