How to make Sole with orange and tarragon sauce:
- We take clean fillets of skin and bones from the sole, salt and reserve.
- We fry the onion cut into brunoises (finely chopped) and the garlic filleted and still not browned, and add the sprinkled flour.
- We stir everything well and add the orange juice, salt, chili and spices (tarragon and chopped parsley).
- When the sauce begins to thicken, add the sole, clean and skinless.
- Let cook over medium heat for about four minutes.
