Sole recipe with mushroom sauce

Ingredients to make Sole with mushroom sauce:

  • 4 sole without skin
  • 200 gr. of mushrooms
  • 1/2 glass of liquid cream
  • bread crumbs
  • 6 tablespoons olive oil
  • 30 gr. of butter
  • 1 egg
  • 1 lemon
  • salted
  • Pepper

How to make Sole with mushroom sauce:

  1. Squeeze the lemon and strain the juice.
  2. Eliminate the sandy part of the mushrooms, wash them and cut them into slices.
  3. Sauté them with 2 tablespoons of oil, salt and lemon juice.
  4. Rinse and dry the soles.
  5. With a sharp knife, make a cut in each one along the spine.
  6. Insert the blade of the knife over and along the spine, so that the fillets come off.
  7. With scissors, cut the spine at both ends.
  8. Pass the soles through the flour, the beaten egg and the breadcrumbs.
  9. Fry them on both sides with the remaining butter, starting with the open side.
  10. Place them in a fountain and remove the central spine.
  11. Blend the mushrooms together with the cream. Season them.
  12. Put them back in the pan and thicken the sauce over moderate heat, stirring.
  13. Fill the soles with this preparation and serve them.
