Sole meunier recipe

Ingredients to make Sole Meunier:

  • 4 sole portions (200 g each)
  • olive oil
  • 150g butter
  • Half a bunch of chopped parsley
  • The juice of a lemon
  • flower
  • 400 g of potatoes turned and cooked
  • salted

How to make sole meunier:

  1. It is preferable to remove the dark skin from soles.
  2. To do this, they are given a cut in the tail area and the skin is pulled with the help of a rag.
  3. Once clean, we remove the entrails and pass them through water.
  4. In a frying pan we heat the oil.
  5. Salt the soles pass them through flour and fry them on both sides over low heat.
  6. We remove the fish to a service tray.
  7. In a separate pan, heat the butter.
  8. When it starts to fry, add the lemon juice and the chopped parsley to this sauce.
  9. Sauté the soles and accompany them with some turned and cooked potatoes.
