How to make sole meunier:
- It is preferable to remove the dark skin from soles.
- To do this, they are given a cut in the tail area and the skin is pulled with the help of a rag.
- Once clean, we remove the entrails and pass them through water.
- In a frying pan we heat the oil.
- Salt the soles pass them through flour and fry them on both sides over low heat.
- We remove the fish to a service tray.
- In a separate pan, heat the butter.
- When it starts to fry, add the lemon juice and the chopped parsley to this sauce.
- Sauté the soles and accompany them with some turned and cooked potatoes.
