Sofrito recipe for fajitas

Ingredients to make Sofrito for fajitas:

  • 2 units of chicken thighs
  • ½ unit of Red Pepper
  • 1 unit of Onion
  • 1 pinch of salt and pepper
  • 1 small glass of Maggi sauce
  • 150 grams of mozzarella cheese
  • 1 tablespoon of oil

How to make Sofrito for fajitas:

  1. The first step will be to remove the skin, bone and cut the chicken into strips. I have used thighs because I think they have much more flavor, but you can use breasts if you prefer.
  2. Season the chicken with salt, pepper and Maggi sauce. You can add a little spice if you want or any sauce or condiment that you like to feel in food. Let the chicken marinate for at least 15 minutes for the meat to absorb the flavor.
  3. While the chicken is marinating, julienne the red pepper and onion. The amount can vary, you can add more onion or paprika to taste.
  4. Heat the oil in a large frying pan and fry the vegetables. Keep moving with the help of a wooden spoon so that neither the onion nor the paprika burn.
  5. To continue with the sofrito for fajitas, add the chicken strips that have been marinating to the pan. Stir and mix with the vegetables so that everything is distributed evenly. Let the chicken cook for about 7-10 minutes.
  6. Finally, when the chicken is completely cooked, add the cheese to the pan. Use grated or shredded cheese and leave the preparation on the fire until the cheese melts.
