Soba Noodles with Vegetables and Tofu Recipe

It’s not the first time I’ve cooked soba noodles, but I love how they turn out, they don’t feel too heavy and they have a touch of very rich flavor that is different from traditional pasta. Soba noodles are a type of fine paste of Japanese origin made from buckwheat or buckwheat. Their consumption is highly recommended because they have a high nutritional value, so if you want to discover a simple and delicious way to cook them, keep reading and find out the recipe for soba noodles with vegetables and tofu that I propose.

Ingredients to make Soba Noodles with Vegetables and Tofu:

  1. 100 grams of soba noodles
  2. 250 grams of tofu
  3. 1 pack Choy or Chinese cabbage
  4. 1 carrot
  5. 3 mushrooms
  6. 1 stalk of celery
  7. 1 small piece of ginger
  8. 1 splash of soy sauce
  9. 1 tablespoon of oil
  10. 1 pinch of salt
  11. 1/2 liter of vegetable broth

How to make Soba Noodles with Vegetables and Tofu:

  • Put the soba noodles to cook in a pot with a lot of water and no salt. When the water starts to boil, cook the noodles for 5 minutes. When the cooking time is over, drain them in the strainer and immerse them in a container with cold water to remove the starch. Once the water is cloudy, run the noodles under cold water until the water starts to run clear.
  • Meanwhile, cut the tofu into large cubes, chop the Chinese cabbage, cut the carrot into small pieces, slice the mushrooms and chop the ginger very finely.
  • In a pot or casserole, heat the oil and sauté all the vegetables(carrots, mushrooms, Chinese cabbage and ginger) until they start to soften. Add a good splash of soy sauce and cook for another 2 minutes, stirring occasionally.
  • Cover the vegetables with a little vegetable broth and bring it to a boil. Lower the heat to medium and cook the vegetables until they are soft to continue with the recipe for soba noodles with tofu.
  • Cook the tofu cubes in a skillet or griddle until golden brown on the sides.
  • Add the noodles and tofu to the pot and stir well. You will have some broth left over; you can remove it or serve the soba noodles with vegetables with broth.
