Snow Pea Cream Recipe

Ingredients to make snow peas cream:

  1. 1 kilo of snow peas
  2. 1 medium onion
  3. 1 liter of chicken broth (if not 1 bouillon cube)
  4. 250 ml of heavy cream
  5. Salt
  6. Nutmeg
  7. Pepper
  8. virgin olive oil

How to make snow peas cream:

  • Clean, remove the strands, cut into pieces and wash the snow peas. Peel, cut and chop the onion. Heat a saucepan or pot with a couple of tablespoons of oil. Add the chopped onion and let it brown well. Add the snow peas, salt, stir and let them poach well over low heat with the pot covered, stirring from time to time. When you see that it is ready, add the chicken broth (if you don’t have it, you can use vegetables, if you don’t have broth, you can do it with 1 tablet of concentrated broth and 1 liter of water in the microwave for 5 minutes at maximum temperature). When it starts to boil, cover, lower the heat to a minimum and leave to cook for 10 minutes. Remove the remaining broth that only covers the vegetables, save it in case you need it, add the cream and beat it with the blender (if you have a potato masher, do it cream and puree are better with it). Taste rectified salt if necessary, sprinkle with a little white pepper and nutmeg to your liking. Let cook 5 more minutes (if you see that it is very thick add some of the broth you have reserved).
