Ingredients to make snails:
- For the sauce:
- four cloves of garlic
- a quarter of an orange peel
- half green pepper
- half an onion
- cayenne to taste
- a meat pill
- salt to taste
How to make snails:
- First they wash very well until the water is clear and the snails are very clean.
- Then they are allowed to come out… song (snail cabbage takes out its horns in the sun) when they come out they are salted and then they are washed, like this several times until the water comes out liquid.
- All this is cooked and reserved. When the snails are clean of slime, they are placed in a wide saucepan without the water covering them, it is put on a very slow fire and when they are all out, the heat is raised to the maximum, when it boils they start foaming and if they cook for five minutes (just so that they finish releasing any slime that may remain) drain and wash, reserving a little cooking water that is mixed with the broth that we have previously made.
- They finish cooking in the broth that we have prepared between 15-20 min. One minute before removing them, add mint.
