  • 1 cup chicken broth
  • 2 pork kidneys
  • 15 grams of lard
  • 250 grams of shrimp or dried prawns
  • 1 clove garlic
  • 1 teaspoon flour
  • 1 pinch of sugar
  • 1 glass of white wine
  • 100 ml of vinegar

How to make Sliced ​​Kidneys Yao Pienn:

  1. Put the kidneys in a saucepan with fresh water.
  2. Remove the skin, open them in half and clean them, so that they do not have any fat or nerves.
  3. Dry them and break them so that all the blood comes out.
  4. Marinate for 30 minutes with the wine.
  5. Soak them again in cold water, and then for a few minutes in lukewarm water.
  6. Place them on a plate.
  7. Melt the lard in the pan and add the kidney pieces.
  8. Sprinkle with the chicken broth and the dried shrimp that have previously been swollen for half an hour in cold water.
  9. Mix the sauce in the pan with a little flour that will have dissolved in water, and with the sugar.
  10. Put the vinegar in the sauce so that it does not thicken too much and stir all the time.
  11. Serve it hot on a plate, watering it with a tablespoon of coffee, oil and finely chopped garlic.
