Ingredients to make Sliced Kidneys Yao Pienn:
- 1 tablespoon of coffee
- 1 tablespoon of oil
- 1 cup chicken broth
- 2 pork kidneys
- 15 grams of lard
- 250 grams of shrimp or dried prawns
- 1 clove garlic
- 1 teaspoon flour
- 1 pinch of sugar
- 1 glass of white wine
- 100 ml of vinegar
How to make Sliced Kidneys Yao Pienn:
- Put the kidneys in a saucepan with fresh water.
- Remove the skin, open them in half and clean them, so that they do not have any fat or nerves.
- Dry them and break them so that all the blood comes out.
- Marinate for 30 minutes with the wine.
- Soak them again in cold water, and then for a few minutes in lukewarm water.
- Place them on a plate.
- Melt the lard in the pan and add the kidney pieces.
- Sprinkle with the chicken broth and the dried shrimp that have previously been swollen for half an hour in cold water.
- Mix the sauce in the pan with a little flour that will have dissolved in water, and with the sugar.
- Put the vinegar in the sauce so that it does not thicken too much and stir all the time.
- Serve it hot on a plate, watering it with a tablespoon of coffee, oil and finely chopped garlic.
