Ingredients to make simple pumpkin cream:
- 1 kilo of pumpkin
- 8 cups of water
- 3 tablespoons of butter
- 1 cup of chopped onion
- ½ cup garlic leek, white part
- 4 cups of meat consommé
- 1 cup of heavy cream
- White pepper
- salt to taste
How to make simple pumpkin cream:
- Cook the peeled and chopped pumpkin in a pot with 8 cups of water and salt until softened, drain and set aside.
- Meanwhile, heat the butter in a saucepan, add the onion and the garlic leek, fry until wilted.
- Add the broth, bring to a boil and cook over low heat for 3 minutes. Remove and let rest.
- Blend all the ingredients, place them in the pot again, bring to a boil and cook for 3 more minutes, correct the seasoning.
- Turn off the heat, mix the pumpkin soup with the cream and serve immediately. If you like you can add pieces of toasted bread in butter or crispy bacon.
