How to make simple baked salmon trout:
- Wash the trout fillets, removing the bones; Pat dry with absorbent paper and sprinkle with salt and dill. Divide each fillet into eight portions. Coat them in flour.
- Fry the fish on both sides in a pan with oil and butter. Drain the excess oil on absorbent paper and place in a serving dish.
- Chop the shallot and fry it in the frying pan for the fish (strain the oil if necessary).
- Meanwhile, clean the mushrooms and chop into small pieces; Sauté in the pan with the shallot for two minutes. Add the broth and cream and stir, let the sauce reduce until it thickens.
- Season with salt and pepper and let cool; cover the fish with this sauce. Put the dish in the preheated oven at 200º C for 10 minutes, and serve garnished with a sprig of dill.
