To get a smooth risotto with the right texture, you must control the cooking times and the power of the flame very well, so in this recipe we explain in detail how to make the rice with shrimp full of flavor, without overdoing it. And with that touch of creaminess that makes risotto such a popular dish.
Ingredients to make Shrimp Risotto:
- 1½ cups of Rice for risotto
- 250 grams of large shrimp, peeled and deveined
- 5 cups low-salt chicken broth
- ¾ cup dry white wine
- 2 tablespoons of olive oil (it can be marigold or vegetable oil)
- 3 tablespoons of unsalted butter
- 2 teaspoons of Garlic
- ¾ cup finely chopped onion
- 80 grams of grated Parmesan cheese
- 1 pinch of salt and pepper
- 2 tablespoons parsley (optional)
How to make Shrimp Risotto:
- Bring the chicken broth to a boil with 1/4 cup of white wine. Once you get to the first boil, turn the heat down to a simmer to keep the broth warm.
- You can use ready-made broth or make it yourself following the recipe for homemade chicken broth.
- In a skillet over medium heat, heat a tablespoon of olive oil. Once the oil is hot, add a tablespoon of butter and melt. Add a teaspoon of minced garlic and fry for a few minutes without burning the garlic. Add the shrimp.
- Sauté shrimp until reddish color is visible (2 to 4 minutes). If the shrimp are precooked, the shrimp should be sautéed just so they sear.
- Add the remaining half cup of white wine and cook the shrimp over low heat for about 2 minutes or until they are cooked.
- Remove the shrimp and reserve the cooking liquid.
- Separately, in a pot, heat 1 tablespoon of olive oil and then add 1 to 2 tablespoons of butter. Sauté 1 tablespoon minced garlic, then 3/4 cup minced onion, until onion is translucent.
- Add the risotto rice and stir for 2 minutes. Add salt and pepper to taste.

- Next add 2 cups of hot chicken broth. Stir and keep over medium heat. Keep stirring from time to time.
- Every time you don’t see liquid cooking, add one more cup of broth and keep stirring. Repeat this for 20 minutes.
- After this time, add the shrimp cooking broth. Cook until the rice is well cooked.
- Add the grated Parmesan cheese, stir and cook over low heat for 5 more minutes until you get the creamy texture typical of risotto.
- Remove from heat and add shrimp. Stir and check if the rice is well salted and peppered. Reserve about 5 minutes and serve each plate of shrimp risotto with a touch of parsley to taste.
