Ingredients to make Shrimp Empanadas:
- For the mass
- 1 teaspoon salt
- 1 cup of butter (225 grams)
- 1 cup of beer
- 4 pieces of egg yolk
- 4 cups of flour (560 grams)
- For the filling
- ½ kilogram of shrimp
- ½ piece of Onion
- 1 piece of Tomato
- 1 tablespoon of coriander
- 100 grams of cheese
- 1 pinch of salt and pepper
How to make Shrimp Empanadas:
1.For the empanada dough: in a bowl put the flour and salt.
2.Add the butter, integrate these ingredients with your fingers until it acquires a sandy appearance and no butter lumps are visible.
3.Add the egg yolks and incorporate.
4.Make a bowl in the center of the dough and pour the beer little by little without needing too much, just add the necessary beer so that the dough is well integrated.
5.Place the dough on a work table and finish kneading gently until the dough no longer falls apart.
6.Rest the dough wrapped in transparent paper for 30 minutes at room temperature.
7.After the resting time, spread the empanada dough on a lightly floured surface.
8.Form the empanada discs with a plate or cutter.
9.For the filling, in a large bowl mix the shrimp, onion, tomato, cilantro, cheese, salt and pepper. Stir well and place enough filling in the center of the empanada discs. Make sure you leave enough space between the filling and the edges to seal them well.
10.Fold and press the edges with a fork so they are well sealed.
11.Heat enough oil over medium-high heat and fry the empanadas until lightly browned, taking care not to burn them.
12.Serve the shrimp empanadas accompanied by lemon juice, Pico de Gallo and hot sauce to taste
