Shrimp empanadas in green sauce recipe

In Mexico, empanadas are one of the most popular recipes since they can be prepared with a wide variety of ingredients. This time, for reasons of fasting from red meat for the celebration of Lent, we bring you an exquisite recipe for Mexican empanadas stuffed with stewed shrimp.

These are delicious shrimp empanadas covered in a rich green sauce, which are an excellent option if we don’t have much time or a big budget for a meal, since these empanadas are super simple, fast and their combination with the flavor of the sauce is unmatched.

Ingredients to make shrimp empanadas in green sauce:

For the empanadas:

  • 1 kilogram of corn dough
  • 3 cups cocktail shrimp
  • 1 head of butter
  • 1 clove garlic
  • ½ white onion
  • ½ cup of oil
  • 1 pinch of salt
  • 1 pinch of pepper

For the green sauce:

  • 1 kilogram of green tomato
  • 1 pinch of Cumin

How to make Shrimp Empanadas in Green Sauce:

In the following image we will be able to observe the ingredients that we will need for the preparation of our shrimp empanadas in green sauce. We are going to start by heating the oil and butter in a frying pan, and once hot, add the finely chopped onion and finely chopped garlic, with a pinch of salt and a pinch of pepper, and let the onion fry until it softens. Once the onion is fried, add the perfectly washed shrimp and let them cook for 3 minutes, stirring constantly. Once cooked, we remove them from the heat and reserve them for a moment. On the other hand, with the dough for empanadas, we form our tortillas: since I don’t have an empanada-making machine, I shape it into a tortilla and that’s it.

Once our empanada is formed with the dough, we are going to fill it with half a tablespoon  of the shrimp stew that we have just prepared. Once filled, we fold the Mexican empanada, perfectly sealing the edges so that our filling does not spill.

Next, in a frying pan with enough hot oil, fry our shrimp empanadas until they are well browned on both sides. Once ready, remove them from the oil and place them on absorbent paper to remove any excess oil they may have. Once our shrimp empanadas are ready, we begin with the preparation of our green sauce: for this we take the perfectly washed green tomatoes and place them in a saucepan with boiling water, together with the green Serrano peppers, the onion and the garlic clove, and leave let everything cook for approximately 6 minutes. Once cooked, we place the ingredients in the blender, add a pinch of cumin, a pinch of salt and a pinch of pepper and begin to mix, until we obtain a homogeneous sauce for our Mexican empanadas.

Once our green sauce is formed, put a little oil in a saucepan, and once it is hot, add the sauce and let it cool for 6 more minutes. Stir constantly and taste, and if necessary add a little more salt. Once ready, remove it from the heat and let it cool down.

To serve them, we place the Mexican empanadas on our plate and bathe them with the green sauce, and if you like you can add a little grated cheese, so the shrimp empanadas in green sauce will be delicious.
